Green Goddess Salad

1/2 head cabbage, cubed
3 cups arugula
1 large cucumber, diced
1/4 cup basil leaves
Dressing:
1.5 lemons, juiced
1 avocado
1/2 cup avocado oil
1/4 to 1/2 cup water for blending
1/4 cup green onions, thinly sliced
1/4 cup dill
1 cup basil leaves
2 garlic cloves, minced
salt and pepper to taste
Anweisungen
STEP 1. Add the salad ingredients to a large salad bowl and mix.
STEP 2. For the dressing, add everything to a blender or immersion blender and blend until smooth. Add water as needed to blend, it should be thick and creamy. Taste for seasoning and add more salt and pepper as needed.
STEP 3. Mix the dressing into the salad and serve!
