Stir-Fried Dried Anchovies

⅔ cup (60 g) walnuts, halved or quartered
2 cups (100 g) medium or small dried anchovies
2 tablespoons neutral oil, such as grapeseed or canola
1 tablespoon finely chopped green onion, white parts only
1 garlic clove, finely chopped
2 teaspoons coarsely ground gochugaru
3½ tablespoons (60 g) sauté gochujang (see recipe)
1 tablespoon honey
¼ teaspoon sesame seeds
Anweisungen
Preheat the oven to 350°F (180°C).
Spread the walnuts on a baking sheet and toast in the oven for about 5 minutes, until lightly browned and fragrant. Remove and set aside.
Meanwhile, remove the anchovy heads, backbones, and guts and split the anchovies in half (if you are using small anchovies, you can skip this process).
Microwave the anchovies on a plate for 30 to 60 seconds to make sure they are completely dry. (Alternatively, stir-fry the anchovies lightly in a dry pan over low heat.)
In a generous-size pan, combine the oil, green onion, and garlic and heat over low heat until the oil is shimmering but not bubbling.
Add the gochugaru and mix well. Cook for a few minutes to infuse the oil, then add the gochujang, honey, and ¼ cup (60 ml) water to the pan.
Bring the mixture to a boil, then add the anchovies. Add the walnuts and stir well. Cook for 2 to 3 minutes, then remove the anchovies and spread them on a large tray to cool.
Toss with the sesame seeds and serve immediately.
