Mini Pecan Pie - Good for You and So Good Too

150g pecans plus extra for topping

150g ground almonds

1/4 cup maple syrup

1/4 cup extra virgin olive oil

10 mejool dates

100ml almond milk

50g dark chocolate

Anweisungen

Preheat oven to 180 FAN (200 regular )

1- Blitz 150g of pecans in a blender until roughly chopped and like a textured flour.

2- Empty into a bowl and add 150g of ground almonds (almond flour), 1/4 cup of extra virgin olive oil and 1/4 cup of maple syrup. Mix and should come together into a dough

3- Divide into 20 pieces and shape each into rounds and make a hole in the middle as shown above.

4- Bake this in the oven for approx 20 mins until lightly brown in colour. Set aside and let cool

5- Pit 10 dates and soak in boiled water for 10 minutes. Drain. Add the dates to a blender with 100ml of almond milk and blender until a paste forms.

6- Fill each little cup with the filling. Add as much or little as you fancy

7- If you want to add chocolate melt about 50g of dark chocolate, I used 70% dark and drizzle over each cup.

8- Top each one with a toasted pecan

9- ENJOY!!!! They are soooo good
