I am a firm believer that anything in a tray is always going to be good 😂
This is my take on one of my favourite desserts Banana Cream Pie.
I present to you - Banana Coconut Pudding 😍
Recipe 👇🏻
150g chopped lady finger biscuits
1/2 cup coconut cream
1/2 cup condensed milk
1 cup water
1 and half packets of Jello Vanilla pudding powder (Australians can use Cottee’s Instant Vanilla pudding)
600ml thickened cream
300ml thickened cream
1/2 cup icing sugar
4 bananas
1 cup of toasted desiccated coconut (I bake in a baking tray at 200° for 15mins until lightly toasted)
Anweisungen
In a bowl add coconut cream, condensed milk, water and vanilla pudding powder in a bowl and whip together until it has slightly thickened. Cover and place in the fridge for 1 hour.
After one hour whip 600ml of thickened cream and then fold into vanilla pudding mixture.
Whip together the 300ml of thickened cream and 1/2 cup of icing sugar until thick.
To assemble place a small amount of vanilla pudding on the bottom of tray and then a layer of the chopped sponge finger biscuits and then slice two of the bananas over the top. Then repeat the layers again, vanilla pudding sponge finger biscuits and banana and then a final layer of vanilla pudding. Place the thickened cream and icing sugar mixture over the top and smooth then sprinkle your toasted desiccated coconut over the top. Place in the fridge for a minimum of 6 hours, can also be made the night before.
