Vibrant veggie noodle soup

8tbsp white miso paste

5cm piece of fresh ginger, chopped

3 garlic cloves, peeled and sliced

100g soba noodles

100g sugar snap peas

100g asparagus, sliced

2 courgettes, spiralised into noodles

200g Tenderstem broccoli

2 yellow peppers, sliced

2 orange peppers, sliced

2tbsp soy sauce

a large handful of coriander leaves

Anweisungen

1 Pour 600ml boiling water into a pan, add the miso, ginger and garlic, then allow to gently simmer for 3-4mins.

2 Add the soba noodles, sugar snap peas, asparagus, courgettes, broccoli and peppers to the pan, and cook for 3-4mins, until just tender. Stir through the soy sauce and ladle everything into warm bowls. Top with the coriander leaves to serve.
