Mexican Cauliflower Rice Skillet (Gluten Free, High Protein)

2 cups butternut squash (cubed)
2 bell peppers (diced)
1/2 onion (diced)
2 tsp olive oil or avocado oil
1 lb ground beef (can use ground chicken, turkey, bison, etc.)
2 cups cauliflower rice (fresh or frozen)
1/2 cup corn
1/2 cup black beans
1 packet taco seasoning
1 cup shredded cheddar cheese (or use dairy free)
cilantro (finely chopped)
Anweisungen
Add butternut squash to a large skillet with 1/4 cup water over high heat. Place lid over skillet and lower heat after a few minutes. Let the squash steam 8-10 min. or until fork tender.
Add in peppers and onions. Sauté over medium/high heat until vegetables start to soften, about 10 min. (Use a lid on the skillet to make this step go quicker!)
Next, add in ground beef and cook until the meat is no longer pink.
Add in the cauliflower rice, corn, beans, and seasoning and sauté 5-10 min.
Finally, add shredded cheese and place lid back on skillet until cheese has fully melted.
Turn off heat and top with cilantro. Serve with toppings of choice - I love using sour cream, Greek yogurt, avocado, extra cilantro, and hot sauce. Enjoy!
