Beef and sweet potato stew

1tbsp sunflower oil

1 onion, chopped

500g minced beef

1 large carrot, chopped

2 celery sticks, chopped

400g can chopped tomatoes

2tsp sun-dried tomato paste

1tbsp Worcestershire sauce

600ml beef stock

500g sweet potatoes, peeled and cubed

flat-leaf parsley, to serve

Anweisungen

1 Heat the oven to 180C/Gas Mark 4, or heat a slow cooker. Heat the oil in a large pan and fry the onion gently for a few mins, to soften. Add the mince, season and cook for 10mins, turning as needed until browned.

2 Add the carrot, celery, tomatoes, tomato paste, Worcestershire sauce, stock and sweet potatoes. Bring to the boil.

3 Cook in the oven for Ihr 30mins or cook on low in a slow cooker for 5hrs. Serve sprinkled with flat-leaf parsley leaves to finish.
