Ginger & Jujube Warming Soup (姜枣茶)

10.5 oz (300 g or more) fresh ginger, peeled and finely chopped
30 whole dried red dates (jujubes), split open (do not remove pits)
Brown sugar or black sugar, to taste (must use one of these)
Water, enough to yield about 12–15 bowls (approximately 3–4 quarts)

Prepare ingredients
Peel the ginger and chop it finely (do not slice—use a generous amount).
Split the 30 red dates open without removing the pits.
First boil
Add ginger and red dates to a large stockpot.
Add enough water to make about 12–15 bowls (approximately 3–4 quarts).
Bring to a boil, then simmer for 15 minutes.
Second boil
After finishing the first batch, refill the pot with water.
Boil again for another 15 minutes to extract more from the ingredients.
Sweeten
Add brown sugar or black sugar while hot and stir until dissolved.
How to Drink
Drink one bowl every 2–3 hours, warm or hot.
If already catching a cold: drink throughout the day without time restriction.
For prevention (not yet sick): drink 3 times daily, finishing before 5 PM.
Suitable for the whole family (children to elderly).

Use plenty of ginger — a few slices are not effective.
