Smash Burger with Sweet Potato Buns

Ingredienser

3 medium sweet potatoes (peeled and grated)

2 eggs eggs (beaten)

3/4 tsp garlic powder

3/4 tsp onion powder

1/4 tsp salt

2 tbsp avocado oil mayo

2 tbsp plain greek yogurt

2 tbsp ketchup

1 tbsp yellow mustard

1-2 tbsp pickle juice to taste

1 lbs lean ground beef

salt and pepper to taste

4 slices American or cheddar cheese

1/2 head romaine lettuce

1 tomato (sliced)

Vejledning

Peel and grate sweet potatoes. Squeeze out as much moisture as possible using a clean kitchen towel.

Add to a bowl and mix with beaten eggs, garlic powder, onion powder, and salt.

Heat a waffle maker or pan over medium heat and lightly grease.

Scoop about 1/2 cup of the mixture per bun and press firmly. Cook until golden and crispy on both sides, about 5-8 minutes. You should get 8 buns total.

Mix together mayo, greek yogurt ketchup, mustard, and pickle juice to make the burger sauce.

Divide ground beef into 4 balls and season with salt and pepper.

Heat a skillet over high heat. Add beef balls one at a time, smash thin immediately, and cook for 2-3 minutes per side until crispy edges form.

Add cheese on top and let melt.

Assemble burgers with sweet potato buns, patty, romaine, sliced tomato, and burger sauce. Enjoy!
