Invisible Spirale À La Courgette

Ingredienser

For a 20 cm mold:

3 zucchini

2 eggs

60 g cornstarch

100 g cottage cheese or ricotta/cream cheese

5 sprigs of chives

Salt, pepper

100 ml milk (almond milk here)

For the gratin:

1 tbsp feta cheese

1 tbsp Parmesan cheese

Vejledning

Using a peeler, cut the zucchini into tagliatelle. I chose a mix of green and yellow zucchini.

On a flat surface, roll up the first tagliatelle, then add the others to form a spiral. Place this spiral in an oiled or parchment-lined pan.

In a bowl (or in a blender), combine the eggs, cottage cheese, milk, cornstarch, chopped chives, salt, and pepper.

Pour this mixture over the zucchini spiral, then sprinkle with feta and Parmesan cheese to brown.

Bake for 30 to 40 minutes at 190°C (375°F).

I recommend letting it cool before removing from the pan: this cake is even better just warm.
