Keto Avocado & Feta Stuffed Sweet Potato Boats

Ingredients (Serves 4)

2 medium sweet potatoes, halved lengthwise

1 avocado, sliced

1/2 cup crumbled feta cheese

2 tbsp olive oil

1 tbsp sugar-free hot sauce

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and black pepper to taste

1 tbsp chopped parsley or cilantro

Optional: sugar-free hot honey drizzle or chili oil

Vejledning

Preheat oven to 400°F (200°C).

Brush sweet potato halves with olive oil and season with paprika, garlic powder, salt, and pepper.

Roast cut-side down for 30–35 minutes until tender and caramelized.

Flip the sweet potatoes and slightly mash the centers with a fork.

Top with avocado slices and crumbled feta cheese.

Drizzle with hot sauce or chili oil.

Garnish with parsley and serve warm.
