Watermelon Halloumi Salad

Ingredienser

2 cups arugula

4 cups seedless watermelon, cubed

2 peaches, diced

1 cup blueberries

1 handful fresh basil, sliced

1/4 cup pistachios, chopped

200 g halloumi, cubed and pan-fried

1 tbsp extra virgin olive oil

juice & zest of ½ lime

Juice & zest of ½ orange

1 tbsp honey

1 tsp Dijon mustard

salt & freshly cracked pepper to taste

chili flakes (optional)

Vejledning

Heat a pan over medium-high heat. Pat the halloumi dry with a paper towel and cube. Add to the hot pan and fry until golden on all sides. Remove and let cool slightly.

In a small bowl, whisk together dressing ingredients: olive oil, lime juice, lime zest, orange juice, honey, Dijon, salt, pepper, and chili flakes if using.

In a large bowl or large platter, layer arugula, watermelon, peaches, blueberries, fresh basil, and fried halloumi.

Drizzle with dressing and scatter with chopped pistachios. Serve immediately and enjoy!
