Breakfast Casserole with Eggs and Sausage
Ingredients:
1 pound breakfast sausage
6 large eggs
2 cups shredded cheddar cheese
4 cups frozen hash browns (thawed)
1/2 cup diced onion
1/2 cup diced bell pepper
1 cup milk
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon mustard (optional)
Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the sausage over medium heat until browned and fully cooked. Drain excess fat and set aside.
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and mustard (if using).
In a greased 9x13 inch baking dish, layer the thawed hash browns, cooked sausage, diced onion, and bell pepper.
Pour the egg mixture evenly over the layers.
Sprinkle the shredded cheddar cheese on top.
Bake for 35-40 minutes, or until set and golden brown.
Let it cool for a few minutes before serving.
