Gerstley Chicken Soup

Whole chicken in parts

3 carrots

3 celery sticks

Bay leaf

Parsley bunch

Sweet potato

Large onion

Water

2 chicken bouillon cubes

S&P

Vejledning

  • Pull skin off chicken but keep bones on (can keep skin on but then you need to spoon the fat off).

  • Chop carrots, celery, and onion into chunks.

  • Most humans like chopped parsley, so add as you wish, but since I don’t, I leave the whole bunch in there for flavor and take it out before serving.

  • Peel sweet potato and add it whole.

  • Add cold water + 2 cubes to cover everything in the pot.

  • Bring to a boil, then simmer

  • Cook until the chicken is cooked, then remove it.

  • Shred the chicken, return it to the pot.

  • Optional: add the bones back to the pot - adds flavor but some get small and break (remove before serving).

  • Remove the sweet potato and blend it with the broth, return it to the pot.

  • Cook for 4ish hours.

  • Remove the herbs + peppercorns if added.

  • Salt and pepper to taste - also can squeeze lemon juice at the end
