Green Goddess Salad with Crispy Chicken & Parmesan

Dressing
2 tbsp greek yogurt
1/2 avocado
Handful of parsley and dill
Juice 1 lemon
1 crushed garlic
Salt
2 tsps capers
Roughly 4 tbsps olive oil
Chicken breast, bashed flat
Seasoned flour
Egg
Panko breadcrumbs
Lettuce
Cucumber
Apple
Parmesan
Vejledning
Make the dressing by blitzing together the ingredients.
Finely chop your lettuce, cucumber and apple. Add to a bowl and mix with the dressing.
Bash the chicken breast flat. Dip into flour, egg and panko breadcrumbs.
Heat oil in a pan and fry the chicken until crispy on both sides.
Finish cooking the chicken in the oven at 200C for 10 mins.
Serve the crispy chicken, topped with the green goddess salad and loads of grated parmesan - enjoy!
you probably don’t need to cook this in the oven, cook on a lower heat in the pan. I have a fear of biting into raw chicken so prefer to ensure it’s fully cooked in the oven! lol)
