Carrot, Apple & Oat Cake

Ingredienser

1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

1 cup grated apple (1 large apple)

2 eggs

1/3 cup honey or maple syrup

1/3 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

Pinch of salt

1/4 cup chopped walnuts or raisins (optional)

Vejledning

Preheat oven to 180°C (350°F). Grease a small cake pan or line with baking paper.

Blend oats in a blender until they become a flour-like texture.

In a large bowl, mix eggs, honey, oil, and vanilla until smooth.

Add the oat flour, cinnamon, baking powder, baking soda, and salt. Mix well.

Fold in the grated carrots and grated apple.

Add walnuts or raisins if using.

Pour the batter into the prepared pan.

Bake for 30–35 minutes until a toothpick inserted in the center comes out clean.

Let the cake cool for about 10 minutes, then slice and serve.

Tip: You can serve it with Greek yogurt or a little honey on top.
