Creamy Tuscan Salmon with Garlic-Parmesan Orzo

4 skinless salmon fillets (about 6 oz / 180 g each)

Juice of ½ lemon
2-3 tbsp all-purpose flour (for dusting)
Olive oil, for frying
1 shallot, finely diced
1 garlic clove, minced
1 tbsp butter
1 tbsp tomato paste
1 cup (150 g) sun-dried tomatoes in oil, chopped
1/2 tsp red pepper flakes (optional)
1 cup (240 ml) vegetable broth
1 cup (240 ml) heavy cream
1/2 cup (50 g) grated parmesan
2 cups (60 g) baby spinach
1 tbsp lemon juice
Fresh basil or parsley, for garnish
1 cup (200 g) orzo pasta
1 tbsp olive oil
2 garlic cloves, minced
2 1/2 cups (600 ml) vegetable or chicken broth
1/4 cup (25 g) grated parmesan
1 tbsp butter

Make the orzo:
In a medium saucepan, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant (don’t let it burn). Stir in the orzo and toast lightly. Pour in the broth and bring to a simmer. Lower the heat and cook covered for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed. Turn off the heat. Stir in the butter and parmesan. Season to taste and keep warm.
Prepare and sear the salmon:
Pat the salmon dry and season with salt, pepper, and lemon juice. Lightly dust each piece with flour.
Heat olive oil in a large skillet over medium-high heat. Fry the salmon for 2–3 minutes per side until golden. Remove and set aside.
Build the sauce:
Reduce the heat to medium. Add butter to the same pan, then sauté the shallot until softened. Stir in the garlic and cook for 30 seconds. Add tomato paste, sun-dried tomatoes, and red pepper flakes. Cook for 1 minute.
Pour in the vegetable broth to deglaze the pan, scraping up any brown bits. Add the cream, bring to a gentle simmer, then stir in the parmesan, lemon juice, and spinach. Cook until the spinach wilts and the sauce thickens slightly. Season to taste.
Combine u0026 serve:
Return the salmon to the sauce and simmer gently for 2–3 minutes to warm through.
Serve over creamy orzo with extra sauce spooned on top. Garnish with fresh basil or parsley.
