Red Rice

Ingredienser

1 Cup Jasmine Rice

2 Roma Tomatoes

1/4 Small Yellow Onion

2 Garlic Cloves

1 Tsp Knorr Tomato

1 Tsp Chicken Knorr

2 Cups Water

Pinch of Cumin

Dash of Black Pepper

Salt to taste

Handful of Cilantro

Vejledning

Blend tomatoes, onion, and garlic cloves together. Set aside.

In a shallow pan, heat 2 tbsp of oil on medium heat (avocado works best IMO). Add rice and toast until golden brown.

Add tomato mixture and cook in the oil for about 2-3 minutes until tomato turns orange.

Add water and all seasonings. Let liquid come to a small simmer and taste liquid before closing the lid. Add salt and pepper to taste.

Add handful of cilantro and stir slightly. Lower heat to low and put lid. Let steam for about 20 minutes or until rice is fully cooked and fluffy.

Once done, let sit for at least 10 minutes fully sealed before serving.

Notater

Can substitute knorr with 1 tbsp of ‘Better than Buillon’ chicken flavor.
