Caramelized Scallion Noodles with @ka-me Wide Lo Mein Noodle

Ingredienser

RECIPE

10-12 scallion whites, finely chopped on bias

2 tbsp neutral oil

50 g palm sugar

30 g oyster sauce

30 g soy sauce

20 g black/chinkiang vinegar

80 g water

1 tbsp cornstarch, dissolved in 2 tbsp water

½ pack KA-ME lo mein noodles

Salt, to taste

Vejledning

In a pot over medium-low, add the neutral oil and the scallion whites. Season with salt to speed up the caramelization process.

Add the palm sugar and cook over low heat until the scallions and sugar browns, about 10-15 minutes.

Add the oyster sauce, soy sauce, black vinegar and water.

Bring the mixture to a simmer and add the cornstarch slurry and thicken.

Season to taste with additional salt if needed.

Cook the @kame_brand lo mein noodles to the package instructions and toss in the sauce.

FRIED SCALLION THREAD GARNISH

4 scallion whites, julienned

Soak the scallion white juliennes in ice water for 5 minutes.

Pat dry VERY thoroughly.

In a pot of 325 F oil, fry the scallion whites until lightly golden, about 2-3 minutes.
