Rainbow Roasted Veggie Board, 4 Vegetables, One Whipped Feta

Ingredienser

For the Vegetables (4 total)

3–4 carrots, peeled and cut lengthwise

2 zucchinis, thick sliced

1 small cauliflower, cut into florets

2 beets, roasted and sliced

4 tbsp olive oil

1 tsp salt

½ tsp black pepper

For the Whipped Feta

200 g feta cheese

¾ cup Greek yogurt

2 tbsp olive oil

1 tbsp lemon juice

For the Three Honeys

Classic Honey

2 tbsp honey

Chili Honey

2 tbsp honey

1 tsp chili flakes

Citrus Honey

2 tbsp honey

1 tbsp lemon or orange juice

Garnish

Fresh herbs (parsley, thyme, dill)

Sesame seeds or crushed nuts

Cracked black pepper

Vejledning

Preheat oven to 425°F (220°C).

Arrange carrots, zucchini, cauliflower, and beets on baking trays.

Drizzle with olive oil, salt, and pepper.

Roast for 25–35 minutes until caramelized and slightly crispy.

Blend feta, Greek yogurt, olive oil, and lemon juice until smooth and fluffy.

Prepare honey variations:

Leave one plain

Mix one with chili flakes

Mix one with citrus juice

Spread whipped feta on one side of a serving board.

Arrange roasted vegetables in colorful sections.

Drizzle different honeys over each section.

Finish with herbs, seeds, and black pepper.

Serve warm.
