MASALA BROCCOLI

Ingredients
1 medium broccoli head 1 ripe tomato
1green chilli, or to taste
2 tbsp vegetable oil
1 tsp cumin seeds
1 tsp brown mustard seeds
1 tbsp tomato paste
1 tsp ground turmeric Chilli powder, to taste 2 tsp garlic paste 1tsp ginger paste 1 tsp soft brown sugar
1 tbsp white wine vinegar
1 tsp ground coriander
Fine sea salt, to taste
Handful of fresh coriander (cilantro)
1 tsp mango powder
Vejledning
Fill and boil the kettle.
Cut the broccoli into small florets.
Finely chop the tomato and slit the green chilli lengthways.
Place a wok on a high heat, then add the following ingredients in this order: 100ml (3/2fl oz/scant ½ cup) hot kettle water, oil, cumin seeds, brown mustard seeds, broccoli, tomato, tomato paste, turnmeric, chili powder, garlic paste, ginger paste, green chilli, soft brown sugar and vinegar.
Stir well, turn the heat down to medium and place the lid on the wok. Cook for 6 minutes.
Remove the lid, then add the ground ooriander and salt to taste. Stir, then cook without the lid on for a further 5 minutes.
Meanwhile, chop the fresh coriander.
Switch off the heat, then add the fresh coriander and mango powder. Stir well before enjoying.
