CRAYFISH TAILS WITH FINE GREEN BEANS

Ingredients
400g (140z) cooked crayfish
tails
450g (1lb) fine green beans Large handful of fresh corlander (clantro) 1green chilli
2 tbsp ghee or vegetable oil
Va tsp fenugreek seeds
1 tsp brown mustard seeds
2 tsp cumin seeds
1 tsp garlic paste
1 tsp ginger paste
1 tsp white wine vinegar
1 tbsp coconut cream
1 tbsp shop-bought fried onions
1 tbsp tomato paste
8 cherry tomatoes
½ tsp ground turmeric Chilli powder, to taste 1 tsp mango powder Fine sea salt, to taste

Butter Bean & Carrot Rotis (see page 165) (optional)

Fill and boil the kettle.

Set aside.
Remove the crayfish from their packaging and drain wel.
Slice the fine green beans into 2cm (% inch) lengths.
Chop the fresh coriander and slit the green chili lengthwa,n
Place a wok on a medium heat, then add the following ingredients in this order: 150ml (5fl oz/scant % cup) hot kettle water, ghee or vegetable oil, fenugreek seeds, brown mustard seeds, Cumin seeds, garlic paste, ginger paste, vinegar, coconut cream, green chilli, fried onions, fine green beans, tomato paste, cherry tomatoes, turmeric and chili powder. Stir-fry for 6 minutes.
Reduce the heat so the míxture is simmering, then add the crayhsh tails, mango powder and salt to taste. Place the io on the wok and cook for 2 minutes.
Remove the lid, switch off the heat. then stír in the fresn coriander and enjoy.
