Sweet Potato Pie ...passover Style

My ode to the Kugel this Chag! 🤪

4 large sweet potatoes, poke holes with fork

1/2 cup sugar (if you like it a bit sweeter add 3/4 cup)

2 large eggs

1/2 cup non dairy creamer

1 tsp. Vanilla

Pinch of salt

1/2 tsp. Garlic powder

Pinch of cinnamon.

Roast the sweet potatoes in the oven on a large baking sheet. 400F for about 45 minutes.

When they are fork tender, peel the skin off and dump into a mixing bowl or blender.

Vejledning

Add the sugar, eggs cream, and cinnamon and whip until smooth.

Put into a 8 x8 baking pan.

Make the crumble topping:

1 box crushed lady fingers

1/4 cup almond flour

1 stick margarine room temp, or 1/2 cup neutral oil

1/3 cup packed brown sugar

1/4 cup crushed pecans (optional)

Throw everything in mixer or use your hands and mix till sand like texture.

Top your pie with the crumble and bake in 350 oven for 40 minutes till golden brown
