Sticky Stove Top Chicken Wings

18 chicken wings (drums and flats, about 2 lbs)
3 tbsp fish sauce
2 tbsp soy sauce
3 tbsp brown sugar (or palm sugar)
3-4 Thai chilies, finely chopped (THAI CHILIES ARE VERY SPICY !! I added 8 but if you're not good with spice you should not be adding any !! Adjust this based on your spice tolerance)
5 cloves garlic, minced
1 small shallot, thinly sliced (optional)
3 tbsp water
Neutral oil or cooking spray
Black pepper, to taste
Lime wedges (for serving)
Cilantro or green onions, for garnish
salt to your liking

Sear the Wings
Heat a large nonstick or cast iron skillet over medium heat with a bit of oil or cooking spray
Sear wings in batches (avoid overcrowding) until golden on both sides (~3–4 min per side)
Then cover and cook on medium-low for 10–15 minutes, flipping occasionally, until fully cooked
