Mousumi's Gobi Aloo

• Potatoes - chopped • Cauliflower - cut into small florets • Onions x 4 - chopped • Tomatoes - chopped • Garlic - 5 cloves, chopped • Ginger - 1" fresh piece, chopped (or use ginger paste) • Cooking Oil
2 tbsp Water •
Turmeric, Coriander, Cumin • Chilli powder, Garam Masala
Vejledning
Garlic and Ginger Paste
1. Mix together ginger, garlic and water
2. Blend to a paste (or crush if no blender available on VSO allowance)
Onion Paste
1. Chop the onions and blend in the mixer together with some water Heat 3 tbs sunflower oil in a saucepan

3. Add 1 x chopped (not blended) onion and try 1 minute
Combine 4 generous tsp of onion paste with 4 generous tsp of garlic and ginger paste
2. Cook together in a saucepan whilst stirring all the time
3. Add a sprinkling of turmeric
4. Add 1 tsp coriander, 1 tsp cumin, and 1/2 tsp of chilli
5. Add a handful of chopped tomatoes
6. Add the chopped cauliflower and potatoes (raw)
7. Mix everything well and put a lid on the saucepan
8. Remove the lid every 5 minutes to stir (and to add small amounts of water if necessary)
9. Cook until tender 10. Sprinkle with garam masala and stir
11. Sprinkle with fresh coriander and Serve
