Easy Roasted Chicken Rice

2 x 150g Boneless Chicken Thighs
1 tbsp light soy sauce
1 tsp dark soy sauce
1 tbsp honey
1/2 tsp five spice powder (optional)
1 tsp ginger, grated
1 tsp garlic, grated
1/2 tsp black pepper
1/2 tsp salt
1 cup uncooked Jasmine white rice, rinsed
1 tbsp melted butter
1 tsp ginger, grated
1 tsp garlic, grated
1 tsp sesame oil
1 tbsp light soy sauce
1 cup unsalted chicken stock
Chicken rice Chilli Sauce
Cucumbers
Cilantro
Chicken Soup
Kicap Manis or Caramel Dark Soy Sauce

Marinating the Roasted Chicken
Rub chicken surface with coarse salt and rinse salt off. This will get you that smooth, glossy skin.
Combine ingredients for the marinade, and massage onto chicken. Marinade chicken skin side up, and leave uncovered in the fridge overnight. This will dry out the skin surface for extra crispy skin.
Once marinated, option to blot chicken skin with paper towels to remove excess moisture. Season with salt and pepper, if doing this.
Method #1: Oven Roasted
Preheat oven to 180°C (350°F). Lay chicken flat on tray and bake in the oven for 25 minutes. Adjust timing according to chicken size. If using bone-in chicken, extend the cook time ny about 5-10 minutes. Optional: At the last 10 minutes, set the oven to ‘Broil’ and turn heat up to 220°C (420°F).
Once chicken cooks through, allow to rest for 10 minutes before slicing.
Method #2: Air Fryer
Preheat air fryer to 180°C (350°F) for 5 minutes.
Place the marinated chicken in the air fryer basket, skin side up. Air fry 180°C (350°F) for about 15-20 minutes, or until chicken is cooked through. If using bone-in chicken thighs, extend cook time by 5 minutes.
Once cooked, let the chicken rest for 5 minutes before slicing.
Chicken Rice
Rinse rice until water runs clear. Add all of the ingredients to the rice cooker pot. Adjust stock amount according to rice cooker instructions. Stir to combine and set to cook at regular settings.
Plate rice, top with chicken, cucumbers and cilantro. Serve with chilli sauce and chicken soup.
