POTATO CRAB CHOWDER

Ingredienser

4 small red potatoes, quartered

3/4 cup chopped carrots

1 medium yellow onion, chopped

1 tsp. dried thyme

1 tsp. minced garlic

1/4 tsp. black pepper

3 cups chicken broth

2 cup water

1 cup evaporated milk

3 Tbsp. cornstarch

1 (10-0z.) bag frozen corn

1 (6-oz.) can crabmeat, drained

½ cup sliced green onions

Vejledning

INSTRUCTIONS

1. Place potatoes and carrots in bottom of a 5-quart slow cooker. Add yellow onions on top of potatoes and carrots, then add thyme, garlic and pepper. Next, pour in broth and water.

2. Cover and cook on low for 3 to 4 hours.

3. After 3 to 4 hours, stir together evaporated millk and cornstarch until smooth in a medium bowl. Pour milk- cornstarch mixture into slow cooker and stir ingredients. Lightly mash potatoes.

4. Stir in corn, then cover and cook on low for I hour.

5. Stir in crabmeat and green onions, then serve.
