SALT AND PEPPER TOFU ĐẬU HỦ XỐC MUỐI TIÊU

300 g (10½ oz) medium-firm tofu

70 g (2½ oz/generous ½ cup) potato starch or cornflour (cornstarch)

¼ teaspoon ground ginger / teaspoon cayenne pepper

¼ teaspoon sea salt

½ teaspoon caster (superfine) sugar

½ teaspoon baking powder

½ teaspoon freshly ground black pepper

3 tablespoons cooking oil

Vejledning

Remove the tofu from its packaging and pat dry, Cut into desired shapes such as batons, squares or cubes. In a large plate or shallow bowl, mix the potato starch, ground ginger, cayenne pepper, sea salt, caster sugar, baking powder and black pepper. Add the tofu and gently toss around so that every piece is covered in the flour mix. In a wok or frying pan (skillet), heat the oil over a medium heat and fry the tofu pieces until each side is golden and crispy, Alternatively, deep-fry at 160°C (320°F) until golden. Serve with noodles, rice, vegetables or with a dipping sauce of choice (page 212). Feel free to drizzle over spring onion oil (page 210) or crispy shallots
