Wild Blueberry Crumble Bars

1 1/2 cups unsalted butter, softened
1 1/4 cups brown sugar
1 tsp vanilla extract
3 cups rolled oats
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
2 cups frozen wild blueberries
1/4 cup honey
Juice of 1/2 lemon

Preheat your oven to 350F. Grease a 9x13 baking dish or sheet pan and set aside.
In a large mixing bowl, cream together the softened butter, brown sugar, and vanilla until smooth. Mix in the rolled oats, flour, baking powder, and salt until a shaggy dough forms.
Press two thirds of the crumble into the bottom of the prepared dish or pan to make an even layer of crust. Bake for 10 minutes, and then remove from the oven. Evenly spread the frozen wild blueberries on the crust. Drizzle the honey and lemon juice on top, and then finish off with sprinkling the remainder of the oat crumble on top.
Transfer back to the oven and bake for 25-30 minutes; or until the blueberries are bubbling and jam-like, and the crumble is golden brown. Let the bars cool and set for about 10-15 minutes.
Slice into squares and enjoy! Store in an airtight container at room temperature for up to 2 days, or in the fridge for up to 1 week.
