Roasted Potatoes

4lbs russet or yukon gold potatoes, peeled and cut into 2" chunks

salt

1/2 tsp baking soda

6 tbsp oil/fat of your choice

ground black pepper

Vejledning

Place an oven rack in the centre of the oven. Heat oven to 450. Place potatoes, 1 1/2 tablespoons salt, and baking soda in large pot. Add water to cover by 1 inch. Bring to a boil, reduce to a simmer. Cook until barely done, about 10 minutes after returning to a boil.

Drain potatoes and return to the pot to dry out. Remove from heat; at the oriole. Toss by shaking the pot until pasty mashed potato chunks.

Spread evenly onto one rimmed baking sheet. Roast 15 to 20 minutes. Loosen potatoes from pan with a thin metal spatula and turn over. Continue roasting until browned and crisp about three minutes longer, turning, and then adding herbs.

Add more salt and pepper to taste; season with herbs if desired.
