Ingredienser

Cocktail:

2 oz Goat Cheese-Washed Gin

¾ oz Spiced Pear Syrup

¾ oz lemon juice

2 dashes Angostura bitters

Black pepper

Goat Cheese-Washed Gin:

1 liter Roku gin

6 grams Cypress Grove goat cheese

Spiced Pear Syrup:

3 Asian pears

5 cinnamon sticks

Cloves

Allspice

Sugar

Vejledning

To Assemble and Serve:

Shake gin, Spiced Pear Syrup, lemon juice, and bitters with ice. Strain over a large ice cube in a rocks glass.

For the Goat-Cheese-Washed Roku:

Combine goat cheese then gin in a container. Freeze overnight and strain.

For the Spiced Pear Syrup:

Blend pears, spices, and equal parts sugar and water until uniform in texture. Transfer to a pot and bring to a boil. Remove from heat and strain.
