• 8 boneless skinless chicken tenderloins
• fajita seasoning, paprika
• quesadilla cheese, approx. 2 TBS per serving
• white queso
Sauce: • 4 TBS light cream cheese
• 1/2 cup greek yogurt (or sour cream)
• 1-2 tsp fajita seasoning
• green chiles to taste
5 minute mexican rice:
• 1.5 cup water
• 1.5 tsp tomato bouillon (Knorr)
• 1.5 cup instant rice
Vejledning
Mix together sauce ingredients in a small bowl and set aside
Prepare chicken, I like to season tenderloins with fajita seasoning then air fry 400F 5 min, flip, then add sauce on top of chicken, followed by 1-2 TBS shredded cheese per piece and continue cooking for 5 more minutes
Prepare mexican rice by mixing water and seasoning, then stir in rice and microwave for 6 minutes or until done/tender.
Serve 2 chicken tenderloins over rice with a drizzle of queso on top!
