A Mediterranean inspired one tray meal with tender & juicy chicken, crispy potatoes & feta cheese seasoned with olive oil, dried herbs, lemon & garlic 🔥
Such an easy meal with minimum effort! The full ingredients & method is listed below.
1kg chicken thighs
1kg potatoes
1 large red onion
2 tbsp olive oil
1 tbsp dried oregano
1 tbsp dried mint
1 tbsp coriander leaves
1 tbsp paprika
1 tsp garlic granules
1/2 tsp chilli flakes
1 lemon (zest & juice)
Salt & pepper
100g feta cheese
Tzatziki:
250g Greek yoghurt (approx)
1 garlic clove minced
Half a cucumber de-seeded, grated & juiced
Handful dill finely chopped
1 tbsp white wine vinegar
Pinch of salt
Vejledning
Roughly chop potatoes & red onion then get them into an oven proof dish with the chicken thighs.
Add olive oil, the dried seasonings, lemon & seasoning then mix well placing the chicken thighs on top.
Place in the oven at 200 degrees Celsius for roughly 35-40 minutes. Once the chicken is cooked & the skin is crispy crumble feta cheese into the tray & bake for a further 5 minutes.
For the Tzatziki just combine all of the ingredients listed above. Squeeze as much juice out of the cucumber as you can to avoid the sauce being too watery.
