Crispy Brussels Sprouts

1 lb Brussels sprouts (trimmed and halved) @queenvictoriafarms
2 tbsp Garlic-infused oil
2 tbsp Brown sugar (packed)
2 tbsp Salt (coarse Kosher preferred)
2 tbsp Black pepper
2 tbsp Chili powder
2 tbsp Granulated garlic
2 tbsp Red pepper flakes
2 tbspn goat cheese crumbles
Pinch of fine herbs
Note: This recipe uses a very high volume of seasoning. If you prefer a lighter coating, you can mix these portions together and use only half the resulting dry rub, saving the rest for your next batch!

Prep the Oven and Pan
Preheat your oven to 360°F. Place a large, oven-safe skillet (cast iron works best) on the stovetop over medium-high heat.

Add the 2 tablespoons of garlic oil to the hot pan. Once the oil is shimmering, place the Brussels sprouts in the pan flat-side down. Let them sear undisturbed for 3–5 minutes until the bottoms are deep golden brown and crispy.

In a small bowl, whisk together your salt, pepper, chili powder, granulated garlic, red pepper flakes, and brown sugar. Sprinkle the mixture evenly over the sprouts in the pan. Toss them quickly to coat every nook and cranny.

Transfer the entire skillet into the oven. Roast at 360°F for 20 to 25 minutes.

Give them one final toss when they come out of the oven. The brown sugar should have melted into a spicy, sticky glaze that clings to the charred leaves.
Quick Tips for Success
Don’t Overcrowd: Если the sprouts are piled on top of each other, they will steam rather than crisp. Use a large enough pan so they mostly sit in a single layer
