Lemon-Herb Quinoa

Ingredience

½ cup dry quinoa

1 cup chicken broth or water

Zest of 1 lemon

1 tbsp lemon juice

1 tbsp olive oil

2 tbsp chopped fresh parsley or mint

Salt and pepper to taste

Pokyny

1. Rinse quinoa under cold water.

2. In a saucepan, bring broth or water to a boil. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.

3. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.

4. Stir in lemon zest, lemon juice, olive oil, and herbs. Season to taste.
