High Protein Chili Garlic Gnocchi

You guys…I’m already making another batch of this, it’s SO addictive🤤 &high in fibre too😘

Recipe:

Blend 1 can (400mL) of cannellini beans, including the liquid, until smooth.

Knead in 2 cups of all purpose flour, 1-2 Tbsp of olive oil and 1tsp of salt.

Once a smooth dough has formed, flour your surface and split into 8 sections.

Roll the dough into logs, then cut along it into about 2 cm pieces, lightly flouring so they don’t stick together.

To a boy of salted boiling water, add in the gnocchi for about 7mins or until they float a bit and start turn white on the outside, stirring occasionally so they don’t stick.

While the gnocchi cooks, in shallow oil over medium-highest fry up 1 diced shallot and 4 sliced cloves of garlic for 2-3mins then turn off heat.

Drain the gnocchi and add it to the pan of garlic, and spoon in a few Tbsp of chili crunch (depending on your spice tolerance). Enjoy!
