DIRECTIONS
1. MARINATE THE CHICKEN: WHISK OLIVE OIL, LEMON JUICE. MINCED GARLIC, DRIED OREGANO, PAPRIKA, CUMIN, SALT, AND BLACK PEPPER. TOSS THE BONELESS, SKINLESS CHICKEN THIGHS (OR BREASTS) TO COAT EVENLY AND MARINATE AT LEAST 20 MINUTES (OR UP TO OVERNIGHT).
2. MAKE THE FETA TZATZIKI: COMBINE GREEK YOGURT, CRUMBLED FETA CHEESE, GRATED AND SQUEEZED DRY ENGLISH CUCUMBER, LEMON JUICE, OLIVE OIL, GRATED GARLIC, AND FRESH DILL OR PARSLEY IN A BOWL OR FOOD PROCESSOR. MIX UNTIL CREAMY BUT SLIGHTLY CHUNKY, SEASON WITH BLACK PEPPER, AND CHILL UNTIL READY TO USE.
3. COOK THE CHICKEN: COOK THE MARINATED BONELESS, SKINLESS CHICKEN THIGHS (OR BREASTS) ON A GRILL OVER MEDIUM-HIGH HEAT FOR 5-6 MINUTES PER SIDE, OR IN A SKILLET FOR 6-8 MINUTES, TURNING OCCASIONALLY, UNTIL GOLDEN AND COOKED THROUGH. LET REST 5 MINUTES, THEN SLICE.
4. ASSEMBLE: WARM PITA OR FLATBREAD, ADD SLICED CHICKEN, TOP WITH CHOPPED ROMAINE OR SHREDDED LETTUCE, SLICED TOMATOES, THINLY SLICED RED ONION, AND OPTIONAL OLIVES OR PICKLED ONIONS OR PEPPERONCINI, THEN DRIZZLE GENEROUSLY WITH CREAMY FETA TZATZIKI.
