Peruvian Spiced Chicken

4 chicken thighs or drumsticks (bone-in or boneless)
1½ tsp paprika
1 tsp cumin
1 tsp garlic powder
½ tsp oregano
½ tsp chili powder (optional)
Salt & black pepper
2 tbsp oil
Juice of ½ lime

Mix spices, oil, and lime juice.
Rub all over chicken.
Pan-sear or bake at 200°C / 400°F for 30–35 min, until juicy and lightly charred.
Cilantro-Lime Rice
Ingredients
1 cup long-grain rice
2 cups chicken broth or water
Juice of 1 lime
¼ cup chopped fresh cilantro
1 tbsp butter or oil
Salt
Quick Steps
Cook rice in broth with salt.
Fluff with butter, lime juice, and cilantro.
Peruvian Green Sauce (Aji-Style)
Ingredients
1 cup cilantro (leaves & stems)
1 jalapeño (seeded for mild)
2 cloves garlic
¼ cup mayonnaise
2 tbsp Greek yogurt or sour cream
Juice of ½ lime
Salt
Quick Steps
Blend everything until smooth.
Taste and adjust lime/salt.
To Serve
Spoon rice onto plates
Top with juicy chicken
Drizzle generously with green sauce
Optional sides: roasted potatoes, salad, or corn 🌽
