Piri Piri Potato Bake with Chilli Jam Glazed Halloumi

You lot loved my previous versions of this bad boy but this could be my fave yet…🤭
Ingredients - serves 2/3 👩🏼🍳
500g baby potatoes
1tsp piri piri seasoning, 1tsp garlic powder, 0.5tsp chilli powder, 0.5tsp mixed herbs, salt & pepper
Handful tenderstem broccoli
1 red bell pepper
1 red onion
200g chopped tomatoes
plus 0.5tsp minced garlic, 0.5tsp chilli flakes
1tbsp BBQ sauce
100g halloumi, sliced thinly
2tbsp chilli jam
1tbsp garlic dip / alioli

Preheat oven to 200 degrees.
Chop baby potatoes into small chunks & lightly oil. Season with piri piri, garlic, chilli powder, mixed herbs, salt & pepper. Pop into the oven for 20 minutes.
After 20 minutes, remove from the oven and add sliced red onion, red pepper & tenderstem broccoli. Give it a good mix and pop back into the oven for 20 minutes.
Whilst that cooks, heat chilli flakes & minced garlic in a small saucepan and add chopped tomatoes. Season with mixed herbs, salt & pepper along with some BBQ sauce. Bring to a simmer and allow to thicken slightly.
Remove potatoes from oven (checking that they’re soft) and switch the oven to grill.
Top potatoes with spoonfuls of your tomato mix & sliced halloumi. Brush halloumi with your chilli jam before popping under the grill for 10 minutes, or until the halloumi is golden and bubbling.
You may have to shuffled around the broccoli to keep it from catching)
Top with garlic dip, some parsley & black pepper and bloody enjoy girlies !!! xxx
LEFTOVERS: I ate this for lunch every day for 3 days. Hold off on topping with the garlic dip if this is the plan. Store in the fridge and reheat in the microwave. Then add your toppings!
