Mayonnaise

Ingredience

Yolks of 4 eggs

1/2 cup vinegar

1/2 cup of water

1/2 teaspoon dry mustard

3 tablespoons of sugar

1 tablespoon flour

1/4 teaspoon red pepper

1 tablespoon butter

1 teaspoon salt

Pokyny

Mix dry ingredients thoroughly. Add liquids and butter. Boil over hot water until smooth. Beat yolks in whipper, then add balance, a few teaspoons first mixing thoroughly.

Let cook but not boil until it thickens. Use whipper without glass bowl. Stir constantly in sauce pan. Add lemon juice or cream to thin when ready to serve.
