Carrot Cake Baked Oats

2 medium ripe bananas, mashed with a fork
1 egg
3 cups rolled or quick oats
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1 cup carrot, grated
1/4 cup pecans, chopped
2 tbsp maple syrup or honey
1 tsp vanilla
1 cup Greek yogurt
1 cup milk
1 cup Greek yogurt
1/2 cup block light cream cheese
1 tsp vanilla
2 tbsp honey
1/4 cup pecans, chopped

Heat your oven to 350°F. Grease a square baking dish or line it with parchment paper.
In a large bowl, mash the bananas until smooth.
Add the egg, maple syrup (or honey), vanilla, Greek yogurt, and milk. Stir until combined.
Add the oats, cinnamon, nutmeg, and baking powder. Stir until everything is evenly mixed.
Optional high-protein tip: If using protein powder, add it here and stir to combine.
Fold in the grated carrots and chopped pecans.
Pour the mixture into your prepared baking dish and smooth out the top. Bake until set and lightly golden, about 40 minutes.
Let the baked oats cool before frosting (this helps it set up and slice cleanly).
Make the frosting: in a bowl, beat together the Greek yogurt, light cream cheese, vanilla, and honey until smooth, airy, and whipped.
Spread frosting over the cooled baked oats and sprinkle with chopped pecans. Slice and enjoy.
