Ingredients: Salmon Bites
1 ½ lbs skinless salmon, cut into cubes
3 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
Ingredients: Tangy Asian Slaw
½ small red cabbage, shredded
1 large carrot, grated
2–3 green onions, chopped
1 cup shelled edamame
1–2 ripe avocados, diced
Black sesame seeds (for garnish)
Slaw Dressing:
¼ cup olive oil
3 tbsp seasoned rice vinegar (or regular + 1 tsp sugar)
Juice of 1 large lemon
Salt & pepper to taste
Ingredients: Peanut Chili Noodles
1 package spaghetti (or noodles of your choice), cooked al dente
2 heaping tbsp chili crunch (homemade or store-bought)
¼ cup peanut butter
¼ cup soy sauce
Reserve 1 cup of pasta water
HOW TO MAKE IT

Start with pasta water — bring to a boil and cook spaghetti to al dente.
Salmon bites: Toss salmon with olive oil + spices. Pan-sear on medium heat for 2–3 mins per side until golden and crispy.
Slaw: Prep cabbage (shred + soak), then combine with carrot, edamame, green onion. Toss with dressing, top with avocado + sesame seeds.
Noodle sauce: Drain pasta, saving 1 cup water. Return to pot and mix in chili crunch, peanut butter, soy sauce, and pasta water. Toss until saucy and well coated.
To serve: Plate noodles, top with crispy salmon, serve with that refreshing slaw on the side.
