Best Pulled Seitan Method

Ingredience

Wet mix:

200 g beans (≈ 1 cup cooked beans)

1½ tbsp fajita seasoning (or any seasoning of your choice)

1 tbsp garlic powder

120 ml water (½ cup)

Dry mix:

180 g vital wheat gluten (≈ 1½ cups)

30 g nutritional yeast (≈ ½ cup)

Prepare the dry mix

In a bowl, combine the vital wheat gluten and nutritional yeast. Mix well.

Prepare the wet mix

Blend the beans, seasoning, garlic powder, and water until smooth.

Combine

Gradually add the wet mixture to the dry ingredients. Do not add it all at once; pour it in little by little until you get a firm, slightly dry dough.

Knead the dough until it becomes elastic and well combined.

Shape

Roll the dough into a long strand and tie it into a knot (this helps create a fibrous, “pulled” texture).

Wrap

Wrap the dough tightly in baking paper, then cover it with two layers of aluminum foil. Make sure it is sealed היט so no water can get in.

Cook

Bring a pot of water to a boil and cook the wrapped seitan for 1.5 hours.

Turn it halfway through (after 45 minutes) to ensure even cooking.

Cool & shred

Remove from the water, unwrap carefully, and let it cool for 10-15 minutes.

Pull the seitan apart using your hands or two forks.

Finish

You can store it in the fridge or freezer, or fry it in a pan until golden brown. Add extra seasoning while frying if desired.
