Tarka Oatmeal

90g oats

240ml milk

240ml water

Pinch of salt

2 tbsp ghee

3 curry leaves

2 garlic cloves, sliced

¼ tsp cumin seeds

¼ tsp mustard seeds

1 tsp chilli flakes

½ tsp turmeric

Pinch of fresh coriander, chopped

Juice of 1 lemon wedge

Heat oats (90g) in a pan for 1 minute. Add milk (240ml) and water (240ml), then simmer for 5–6 minutes until thick. Add salt (pinch) during cooking, then turn off the heat

To make the tarka, heat ghee (2 tbsp) in a separate pan. Add curry leaves (3) and cook for 1–2 minutes

Add garlic (2 cloves), cumin seeds (0.25 tsp), mustard seeds (0.25 tsp), chilli flakes (1 tsp) and turmeric (0.5 tsp). Cook for 1–2 minutes until the garlic is golden

Pour the tarka over the oats and stir through, then finish with coriander (pinch) and lemon juice (1 wedge). Stir once more and serve
