SUMMER CORN FRITTERS

2 cups fresh corn kernels, off the cob

1 cup green onion, chopped

1 cup cornmeal

½ cup garbanzo bean flour

½ teaspoon baking soda

1 egg

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon ground coriander

¼ teaspoon cayenne, optional

1½ teaspoons sea salt

Ground black pepper

Olive or avocado oil for frying

AVOCADO BASIL DIP

1 ripe avocado, skin and pit removed

6 basil leaves, chopped

Juice of ½ lime

6 tablespoons water

1 tablespoon olive oil

½ teaspoon sea salt

2 grinds ground black pepper

1 teaspoon hot sauce

Mash the avocado and mix it with the remaining ingredients. Serve alongside the fritters.

In a food processor, purée chopped green onion with 1 cup of corn until smooth. Add the remaining cup of corn and cornmeal to the processor and pulse just a few times to mix but not purée.

Transfer the mixture to a medium bowl. Add the remaining ingredients and stir to incorporate them.

On medium heat, fry spoonfuls of the mixture in batches in a large cast-iron skillet with enough oil to cover the surface of the pan. Pan-fry for about 3 minutes on each side, or until golden brown.

For a lower-fat alternative, bake the fritters on a lightly oiled pan at 400°F for about 20 minutes, until browned, flipping halfway through. Serve with Avocado Basil Dip.
