NANDOS LOADED POTATOES
This recipe is one of my absolute favourites & it’s so popular with my platform members, so I’d thought I’d share here with you guys too.
For the chicken & halloumi
300g diced chicken breast
1 small diced onion
Half a diced pepper
half pouch Nandos peri rub
2tbsp Nandos medium sauce
60g light Philadelphia
For the potatoes
400g maris piper potatoes
Tsp aromat, paprika & garlic granules
Nandos peri peri salt
Toppings
20g reduced fat cheddar
80g halloumi diced
Tbsp chilli jam
30g perinaise
chopped parsley

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins & then add to your airfryer add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are nice and crispy.
Then dice the chicken and coat in the seasoning & sauce.
Fry off the chicken, once it has some colour add the onion and pepper, cook for a few minutes until softened. Then add a splash more peri sauce and the Philadelphia and leave this to simmer and until the chicken is cooked.
Whilst that cooks, add the diced Halloumi to a pan once it’s almost finished and nice and brown on the edges, add the chilli jam and fry for another minute making sure the halloumi is evenly coated.
Once the potatoes are cooked add these to a bowl, top with the chicken, scatter over the grated cheese.
Finish with perinaise, the halloumi and parsley!
