Chicken Marinade Ingredients:
1 tbsp light miso paste ($0.26)
1 tbsp soy sauce ($0.04)
1 tbsp rice vinegar ($0.11)
1 tsp honey ($0.02)
2 cloves garlic, minced ($0.01)
450 g boneless, skinless chicken thighs ($2.56)
Broth Ingredients
1 tbsp olive oil ($0.05)
6 cups water (FREE)
2 tsp chicken bouillon ($0.07)
1-2 tbsp light miso paste (to taste) ($0.26)
1 tbsp soy sauce ($0.04)
1 tsp fresh ginger, grated ($0.01)
Rice:
3 cups cooked rice (1 cup dry) ($0.14)
Toppings:
1 cup sugar snap peas ($0.50)
½ large carrot, grated ($0.04)
1 red chili, sliced ($0.05)
1 green onion, sliced ($0.06)
1 tsp sesame seeds ($0.02)
Pokyny
In a bowl, whisk together all of the chicken marinade ingredients. Add whole chicken thighs and turn to coat. Marinate in the fridge for 15-30 minutes.
Heat olive oil in a large skillet over medium heat. Add chicken thighs, shaking off ass much marinade as possible, and cook 5-6 minutes per side (until deeply golden and cooked through). Transfer to a plate and loosely cover with foil.
To the same pan, add the remaining broth ingredients and stir to combine. Bring to a gentle simmer.
Divide rice and cooked chicken into 4 bowls. Ladle over the broth and finish with your favorite toppings. Enjoy!
