Tacos
• 2 tbsp taco seasoning (or make your own) • 1 tbsp fresh lime juice • 1 tbsp olive oil • 1 tbsp water • 1 (15 oz) can chickpeas/garbanzo beans, drained and rinsed • 1 small head cauliflower, washed and cut into bite-size florets
• Corn tortillas
• 1 cup finely chopped red cabbage • 1 jalapeño, sliced, seeds removed (optional) • 1 avocado diced (optional)
Lime Crema • 1 cup plain Greek yogurt or sour cream • 1/2 lime, juiced • 1/4 cup chopped cilantro • Salt and pepper, to taste
Make Your Own Taco Seasoning . 2 tsp chili powder • 1 tsp ground cumin • 1/4 tsp garlic powder • 1/4 tsp onion powder • 1 tsp sea salt

PREPARATION
• Pre-heat air fryer to 390°F. See "Tips" for using an
oven instead.
• In a medium bowl, whisk together taco seasoning,
lime juice, olive oil, and water.
• Stir in chickpeas and cauliflower florets. • Dump everything into the air fryer basket. • Cook in the air fryer, shaking the basket occasionally, for 20 minutes, or until cooked through. Cauliflower will be golden but not burnt. • To make the crema, place the Greek yogurt or sour cream in a small bowl. Add fresh lime juice and cilantro. Stir well. Season with salt and pepper, to

TIPS AND RECIPE MODIFICATIONS
• Alternative oven directions: Preheat oven to 400F. Bake for 30-35 minutes, stirring occasionally. The cauliflower should be fork tender, and the chickpeas should be starting to get crispy. • Substitute plant-based yogurt, sour cream or tahini for a 100% plant-based meal. . If watching vour sodium, make your own taco seasoning and reduce or remove the salt.
• Use whatever tortillas you have on hand. • Add pickled red onions for additional flavor and color pop.
