Greek Chicken Casserole

For the Casserole:

1 cup uncooked rice

2 cups chicken broth

1 tsp dill

1 tsp garlic powder

1 tsp onion powder

Salt & pepper, to taste

Chicken thighs

Olive oil

Fresh parsley

Tzatziki sauce

Sliced red onion

Cherry tomatoes

Chopped cucumber

Feta cheese

Preheat oven to 375°F. Pour uncooked rice and chicken broth into a baking dish. Season with dill, garlic powder, onion powder, salt, and pepper.

Toss chicken thighs with olive oil, salt, pepper, and fresh parsley. Place in a single layer over the rice.

Top each chicken thigh with a scoop of tzatziki sauce and spread evenly.

Sprinkle sliced red onion, cherry tomatoes, chopped cucumber, and feta over the chicken.

Drizzle with olive oil and sprinkle with additional fresh parsley, salt, and pepper.

Cover with foil and bake for 35 minutes.

Remove foil and bake an additional 10–15 minutes, or until chicken is fully cooked.

Serve with extra tzatziki sauce and feta.

Tips

Make sure the chicken thighs are similar in size for even cooking.

Let the casserole rest for 5 minutes before serving to allow the rice to fully absorb the broth.
