High-protein Triple Berry Bake

Berries:

1 cup strawberries, chopped

½ cup blueberries

½ cup raspberries

1–2 tbsp honey or maple syrup (optional, for sweetness)

Base & Protein Batter:

1 cup rolled oats

½ cup vanilla or unflavored protein powder

½ tsp baking powder

1 tsp cinnamon

½ cup milk (or almond milk)

1 large egg

1 tsp vanilla extract

2 tbsp Greek yogurt or unsweetened yogurt

Pinch of salt

Optional Topping:

2 tbsp sliced almonds or chopped nuts

Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar oven-safe dish.

Mix dry ingredients:

In a bowl, combine oats, protein powder, baking powder, cinnamon, and a pinch of salt.

Mix wet ingredients:

In another bowl, whisk together milk, egg, vanilla, and Greek yogurt.

Combine:

Add wet ingredients to dry ingredients and stir until a thick batter forms.

Layer berries:

Pour half of the batter into the dish. Add a layer of mixed berries, then pour remaining batter on top. Scatter remaining berries over the top.

Add topping (optional):

Sprinkle sliced almonds or nuts for crunch.

Bake:

Bake for 35–40 minutes until the top is golden and a toothpick inserted comes out clean.

Serve:

Allow to cool slightly before slicing. Can be served warm or cold. Optional drizzle of honey or yogurt on top.

Tips

Use frozen berries if fresh aren’t available — thaw slightly before baking

Swap oats with almond flour for a lower-carb option

Can be made ahead and stored in the fridge for 2–3 days

Perfect post-workout breakfast or high-protein snack
